Keeping your weight under control is one of the hardest things about being in college (maybe even harder than your classes, unless you are pre med or something). Being a college sophomore I have tried every trick in the book, and every diet out there. I once even tried to substitute two meals a day with slim fast shakes (I would not recommend that, it was not very fun or effective). So when I came across Shelly Marie’s book Eat Well and Be Fabulous I have to admit I was a little weary. However, after reading her book not only do I have a new outlook on my own eating habits, I realized why nothing else I tried had worked before.

Shelly’s book starts off testing her reader’s knowledge by giving them a quick quiz about what is the right and wrong way to eat. She then goes on to explain her theory about eating using real life college examples. Throughout the book she creates characters that represent the different types of college students.

Throughout the book she gives her readers steps to help plan good eating habits. For example, in Chapter 8 she helps her reader come up with a sensible shopping list and gives them recipes that can easily be made in a dorm room. Although my favorite part of the book is towards the end where she gives us reasonable choices to choose from for breakfast, lunch and dinner. Unlike many of the diet books I have read in the past, Shelly knows what it is like to be on a college campus and has figured out how to get around the bad choices we often see daily.

I don’t want to give too much away, as I really believe this book is worth reading. However I will leave you with a little taste, my favorite recipe from the book.

Stir- Fry Chicken

You will need:

Hormel or Tyson Chicken Strips

Uncle Ben’s Wild Rice Microwave Packet

Frozen Stir-Fry Vegetable Packet

Low Sodium Soy Sauce

  1. Spray saucepan with non-stick cooking spray.
  2. Add frozen vegetables. Cook for 3-5 minutes.
  3. While vegetables are cooking, prepare rice packet in microwave.
  4. Add chicken to vegetables. Cook for 2 minutes.
  5. Add one small spoon of soy sauce. Cook for 30 seconds.
  6. Remove from heat.
  7. Stir in Rice.
