Today’s Menu:

BBQ Bone-In Chicken Breasts (an assist from “Sister Silly”)

BBQ Corn on the Cob

Blackberry Cobbler

BBQ Bone-in Chicken Breasts

– Be sure to buy your breasts with the bone still in.  This adds tremendous juiciness and allows you to be more aggressive when grilling.

– Marinate the chicken in your favorite BBQ sauce and Frank’s Red Hot for minimum of two hours

– Keep a bowl of the marinade on the side to sauce while grilling

– Grill the chicken for 4 minutes per side (can be longer on bone side but when skin touches grill you must be careful not to have it burn or stick)  Every time you flip, sauce generously

– After minimum of 15 minutes on the grill take it off and cut the biggest piece to make sure it is cooked through.  Rare chicken is NOT an option.

BBQ Corn on the Cob

– Shuck Corn

– Smother in butter and sprinkle cayenne pepper

– Grill, turning every 3 minutes until you see nice grill marks on the outside

– Smother in butter and sprinkle more cayenne pepper

Blackberry Cobbler

– Preheat over to 350 degrees

– Place Blackberries on the bottom of a Pyrex pan completely covering the bottom

– Add sugar on top to form a syrup when baked

– Make dough with one stick butter, one cup brown sugar and a cup of flour.  Mix until formed

– Place splotches of dough over the fruit

– Bake for 30 minutes then put on broil for final 5 minutes

– Serve with Vanilla Ice Cream
